1. Mix together one box of cake mix (any kind), 1/2 cup of oil, and 2 eggs. Stir with a fork until most of the lumps are gone and the batter forms into a doughy ball.
NOTE... The batter will be a bit oily.
2. Roll the dough into 1" balls. Allow the balls to sit for about 5 minutes. It is best to lay the balls out on a plate and not to stack them as in the above photo. They got stuck together and I had to reroll each ball before the next step.
3. Put a fairly generous amount of powdered sugar into a shallow bowl or pan. Roll each individual cookie ball into the powdered sugar coating it completely. Lay the finished dough ball back onto the plate.
4. Place cookies about 1 1/2- 2 inches apart on a ungreased cookie sheet. Bake in a 350 degree oven for 8-12 minutes.
Note... It is best to not over cook. Cookies will appear too moist even when they are done.
Cookies are done when the top is crackled in appearance and there is a slight give when touched.
