Watermelon and Feta Salad

  • 2 TBS olive oil
  • 1TBS white wine vinegar
  • 1 TBS lime juice
  • 1/4 tsp each of salt and pepper
  • 1/4 of a red onion thinly sliced
  • 1 lb. of seedless watermelon cut into thin chunks
  • 3 oz. feta cheese
  • 3 cups of your favorite salad greens

1.  In a bowl, wisk together all dressing ingredients.  Add onion and let sit for 10 minutes.

2.  Add all salad ingredients except for cheese into a bowl and toss.

3.  Sprinkle with feta.  Drizzle with dressing.  Serve.
